Levain


Levain Bakery Eatery is a new trendy place in Punavuori, Helsinki.  Levain was opened on April 2017 and has quickly become a popular place to be and a warm and cozy living room for the urban neighborhood. Levain is part of BW-restaurants Oy which consists of five quality restaurants located in Helsinki; Farang, Gaijin, Bulevard Social, Bronda and Levain.  BW-Restaurants Oy is a privately owned restaurant company headed by Tomi Björck and Matti Wikberg.

Levain’s speciality is the real wheat sourdough. Levain offers various freshly baked sourdough breads every day and throughout the whole day. All the breads are baked with high quality ingredients and naturally leavened with self-made rye or wheat levain.  The bakery also offers other tasty goods such as croissants, brioche buns, tartelettes, teacakes, seasonal pies and pastries like Kouign-Amann and famous Portuguese Paisteis De Nata. Levain bakery-eatery also offers breakfast, lunch and a light dinner.

I spent nine weeks in a work placement at Levain Bakery from October to December 2017. The bakers took me as a part of their team and gave me an opportunity to learn the secrets of their tasty treats. They taught me how to work accurately and efficiently and how to always maintain best quality in every product.  I learnt so much about sourdough, laminated pastries and baking in general as well as new techniques. The bakers in Levain are true professionals and it was an honor to get the chance to learn from them.
